These pea and prosciutto baked eggs are so quick and effortless to throw together, and they look beautiful and taste delicious.


It’s perfect for a lazy breakfast or brunch, or if you need to throw something simple but impressive together for visitors.


Eat with some sourdough toast, or just some fruit and you have a really lovely balanced and nutritious meal that will keep your blood sugar balanced, support metabolic health, and help you lose weight.


🥓Lay down a couple slices of prosciutto or Parma ham in a small greased baking dish.


🍳Crack in 4 - 6 eggs.


🟢Sprinkle over 2 handfuls of frozen baby peas.


⏲️Place in pre-heated 350F oven for 10 - 15 minutes.


🌱Top with more prosciutto and a couple of handfuls of fresh spring greens like rocket or watercress.


🤤Drizzle with olive oil and balsamic vinegar to serve.
