Slow cooked. Spicy. Super easy. SOOOOO GOOD!!
As the weather grows colder I like to make soups that are hearty, healthy and warming. This slow cooked chicken Taco soup packs a punch and is easy to make:
What you'll need:
4 skinless organic chicken thighs
2 cloves garlic minced
1 cup of white wine or 1 8oz can of light beer
1 cup water
1 lime sliced.
1/2 large Vidallia onion diced
1 tsp ground cumin
1 tsp ground coriander
1 tsp good salt
2 habanero peppers
handful of cilantro
1/2 cup rice rinsed
1 can Mexican beans
Olive oil
Let's get cooking:
In a dutch oven sauté onion and garlic with 1/2 tsp salt and 1 tbsp olive oil until golden brown.
Add chicken thighs and sear until brown.
Pour in wine or beer. Add rest of salt, cumin, coriander, and peppers. stir and bring to boil.
Add water, rice, lime slices and cilantro. Reduce to simmer and cover. Cook for 2 hours.
Remove peppers and lime. Add in beans.
Simmer for 1 more hour. Serve hot with mixed greens and tortilla chips. Sprinkle fresh cilantro on top!
